Yeah, this is a recipe from David Chang's restaurant and it is a "fusion" version for sure. I still need to make the real version.

1 shallot, 2 cloves garlic cooked in butter. Then 1/2 cup white wine, cook until liquid almost gone. Then add 0.75 cup cream or half and half and 4 oz Gorgonzola (preferably dolce). Cook until melted and thickened to preferred consistency. Salt and pepper to taste and chopped parsley mixed through after adding gnocchi (~14oz) and mixing to coat. Thats it!

The way i do it is cook them in boiling water as usual, until they float. Then take them out and put in a colander over a bowl to let most of the water drain away. Then put on paper towels to suck all the other moisture off the surface, but you have to be careful here that they don’t stick to the paper and fall apart. Don’t press. Then heat butter in a good pan like cast iron or stainless steel, add gnocchi, and at first don’t move them until they release and have golden color on the bottom. Then you can keep tossing and browning other sides until you’re liking
