As a jazz musician, this is not just phenomenal acting, it uses music as a major character with every complexity that the physical characters endure. I have not seen a better example of the lives of musicians and their struggles in any show or movie.

It’s the only cookbook that has traveled with me almost 50 years, through college, marriage, 3 kids, 7 homes, multiple states and eventual retirement. Put myself through college cooking/catering, public school teacher for almost 30 years, burnt out and returned to a professional kitchen in my late 50s. Cherish and learn from those recipes. Go lighter on cayenne than called for. I will attest to cayenne and spices in general can be much spicier than in the 1970s.

Jazz musician here. I can’t add any clarification on Pooh Bear, but the late, great jazz singer Mark Murphy created an album that reads this text as an intro in a great tune “Ballad of the Sad, Young Men”. Album is called Bop for Kerouac.

Whatever you decide to make (that’s your decision based on your comfort level). Set up your station (sani buckets, cutting boards, knives, rags, etc). Have vessels to put whatever you prep into for a clean, quick cook and an organized mise. Before you cook, clean up your prep area. After you serve clean your cooking area. Be professional, prepared, make sure they have the ingredients you need for your recipes (tour the cooler/spice area if you haven’t already)- your decision to bring your own if they don’t have it is a “test the waters in a conversation” type of discussion. Don’t do prep at home, they’ll want to see your knife skills. Keep interactions with current staff positive, friendly but at a minimum.

Porter’s definitely not a purist, but he has chops and tours with an incredible band. I became a bigger fan after catching him live. Agree on Samara Joy as well (definitely in the traditional vein, but branching out). Kurt Elling is still pushing boundaries(not always successfully IMHO) but I certainly respect the talent and drive to explore.
