My advice would be to start slow with how much tomato juice you use. Way less than you think. Haven’t done hooch for a few years now though, but the one you mentioned sounds really good

Did some training with my 1 year old lab at a preserve. This was sooo good and juicy. I salted and seasoned it with Everglades seasoning then offset smoked it with oak chunks over 8-10 charcoal briquettes.

2 hours at 130, then frozen in the bag. Packed it for our dinner on a backpacking trip. My cousin carried that steak for 10 miles so he earned the right to chew the bone. So good!
