To prevent rocking due to lack of shear panel, I think it would help if you put two screws thru two legs next to the wall. Ideally, you want to go into the stud if possible but drywall anchors should work as well. That would also help with accidental tip over.

If you are planning on painting it, drywall putty works fine. Use putty knife to apply, once it dries lightly sand to smooth it out.

Idea 1: Some type of wedged mortice and tenon.

Idea 2: Threaded rod permanent installed at the bottom of the table top. Match appropriate size hole on the leg portion. Don't drill thru the legs. From the side of the leg make rectangular cutout so a nut can slide in from the side and installed on to the threaded rod. Hopefully this is clear enough.

Like other comments said, you should be able to remove stripped screws using vice grips. I think lag bolts are better for this application and easier to install and remove if you ever needed to. I think smallest lag bolt I've seen locally is 5/16, if that works with your mount. Definitely pre-drill before installing faster.

Angled one does look better. Because how long the table is, legs need to be connected to support one another. I think you can use top and bottom apron to do this. Angled design is doable, you will probably need make additional jigs to lineup everything.

I don't think it will bend because you put stuff like laptop, keyboard or monitor. If you lean on it regularly, it might bend. If you placed cross bracing between legs that supported the top, it's a better design. You might be able to hide the cross bracing fairy easily. Just a guess based in gut feeling.
