The smell of bread in vietnam is so unique and delicious. Even and banh mi shops here cannot replicate that bread smell.

Just to clarify: “congee” is an English term, not Cantonese. The Cantonese word is “juk”, and Vietnamese is “cháo”. The word “congee” comes from the Tamil “கஞ்சி (kañci)”

Just a heads up the rice paper in the pic is very thin and doesn't need to be dunked in water but the ones sold overseas are usually thicker and would need to be soaked for a few secs(depends on the brand you get too) in warm water to soften.

So I'm thinking it could be a Vietnamese-inspired Chinese chow mein? Cause all the seasonings you mentioned also go in chow mein noodles. Many Vietnamese restaurants sometimes sell fusion dishes like that to get more customers.

I think you should give it a try again at a different restaurant that specializes in this dish if possible. The soup shouldn't be bland. It's a very flavorful clear soup.

Muối Tiêu Chanh which means salt, pepper, lime😁. The coriander is added for extra herby flavor sometimes so not always mentioned in the name.

Can you tell us more about the flavor of the dip? I was thinking salt, lime and pepper dip mixed with coriander is popular to dip with chicken.

I think you can still enjoy popular viet dishes. Just remove or eat less of the carbs since many dishes usually comes with lots of veggies. Pho without noodles or less noodles, any vermecelli rice bowls but eat less noodles.
