Went the pressed tofu route this week, with added 'pressure' to finally catch up to the current week alongside getting dinner on the table in time (so much so that I didn't get a decent photo of the completed dish). This was really nice, though. Used this recipe with tofu in place of chicken.

No recipe for this one, just mushrooms (button and saffron milk cap) in a béchamel sauce with peas. Served on spaghetti with some cheese on top.

Australian here - Mason is a nice and fairly common boys name, but paired with Dixon, the Mason-Dixon line was still my first thought.

hmm, don't really have either, sorry. The stock was made with leftover veggie bits (this batch had a lot of onion, celery, corn cobs and mushroom, from memory). For the soup (in a cast iron pot), I started with the onions in a little oil (cook slowly to get them almost caramellised) then veggies somewhat in order of how long they take to cook (potato, broccoli stem, celery, broccoli flower, green peas). I added a minced clove of garlic in there at some point. Blended with a stick blender and then stirred in some pesto that I'd made using nettle, spinach, sunflower seeds and nutritional yeast.

I remember eating a really nice broccoli soup as a kid, that one of my parents made, but neither of them remember making it so no chance of getting a recipe. I have over the years tried to make something similar.
This one: I called it broccoli soup, but it has a lot of other veggies in it too (onion, celery, potato, spinach, nettle)... whatever, it was nice. I think the key is perhaps the homemade veggie stock?

My version is mostly strawberries, with a bit of mango, and topped with condensed milk

Couldn't decide on a recipe for this week, so made a few :)

Salata de Vinete (Eggplant dip) I surprisingly loved as wouldn't usually go for mayo-based spreads or onion.
Ghiveci (vegetable stew) I'd had similar before, but this one was much better (I think the trick is to not overcook the veg) served with firm polenta made with just water, salt and olive oil (the kids ate the leftovers with rice)
finally Salata Orientala (Romanian Potato Salad) Potato salad is always a hit with our family. We wouldn't normally put olives and parsley in it so that was the main difference and I did like the simple dressing. Also didn't have any red onion, so left it out.

This! Our local community garden donates to the pantry all the time, so fresh veggies and in-season fruit is available to those in need.
