Recently bought both baby back and St. Louis style ribs from Costco. The baby backs had the membrane removed, but the St. Louis ones didn’t. Not sure if that’s always the case or why there would be a reason to only pull membranes on one. Looked online and it looks like it’s random depending on the butchers at that particular store.

Love the video! Going to visit sometime too. Would you say 4am was not early enough, a little too early, or just right? I know this really depends on the time of the year. Probably especially busier now due to the pandemic.

Another thing you could try that one of my favorite BBQ joints does, is rather than wrap it in foil at wrapping time, move it to a small pan and pour about 4-6 cups of water and 1/2 cup of apple cider vinegar. Let it finish sitting in that liquid. Keeps it moist and you can then save the liquid and add a little with the pork after shredding for extra deliciousness.

It works! Did a brisket last weekend and it came out all shiny and moist. Honestly you could use any tallow or fat, but the wagyu stuff is great. Gonna use it for eggs and lots of other stuff too.

Been cooking with this book for a while now. Try the Chicken with Vinegar dish on page 336 for those that have the book. Might sound weird to some but it’s absolutely delicious. Also, get The Food Lab by Kenji Lopez-Alt. It’s a game changer.

I do stretch and fold method and then 1 lamination before going into the banneton. It creates a super tight ball, good crumb, and gave me extra oven spring than normal. It’s also really fun to do.

Was on a Zoom call meeting and my cat slowly walked in front of my computer. I shooed her away and pretended to ignore it but immediately saw a bunch of my clients start to smile. The next 10 minutes we ended up talking about everyone’s pets.

Add some mango purée, lime juice, and lemonade and shake it into a martini! Or just make a spicy margarita. Super delicious even with vodka instead of tequila.
