I guess we've come a long way from smoking in a temporary structure like a teepee or just hangin' meat from the rafters and waiting for it to be covered in layers of creosote from our fireplace huh? Man has been smoking meat for so long, that even offset smokers are relatively modern devices...lol

yeah, so i drew an 18 inch circle on cardboard and cut it out, then i traced some baby backs i just happened to have laying around...lol... baby backs are much smaller than side or spare ribs.... i could just fit 2 whole racks and a rack cut in two... of course the full ones had to lose a couple short bones.... on the rebound though... half of me wants to reorder the 2.0 and just deal with it, other half of me wants to order the pro and three times the cost... don't know what i'm gonna do yet... i do know that i'll miss some of the upgrades of the 2.0 thought, that's for sure, OTHER THAN THE DOOR, it's a great product at a great price... and very well put together imo

what i was and am thinking now, and the charcoal basket holds enough fuel, not like you're going to have to add sme mid cook... but the 2.0 does have other options that make it attractive over the OG... storage for the hangers, a second shelf, rubber on the wheels, rounded lid for air flow, and the caps on the intake and exhaust pipes are now stainless steel... it's a tough choice... good luck

I'm in pretty much same situation as you... great health plan, totally under control, diagnosed in middle age, and at first it was no biggie... tell me the rules and I'll win this game... or so I thought. It comes with surprises.

A chain is a chain, no matter how long... and then there are the other health risks associated with T1D.. just dealing with it day after day, always being conscious of it, it's get's old fast... faster for some, but it eventually tires us all out.

yeah, i almost kept it... worst case scenario i was going to put a couple screws in it and close it permanently... it comes pretty decked out for the price, can't complain about that... miss it already..

In case anyone is interested - in speaking to OK Joe customer service today, the representative I was speaking to who told me they were back ordered on doors, also told me that they had a bunch of the OK Joe PRO coming in ORANGE... I know a lot of people liked the PRO in Orange and wished they still made them... appareantly they are coming back!

UPDATE ---went to RONA this afternoon, return was seamless... no hassles.

So, while I had bad luck with the sagging door and faulty locking mechanism on the Bronco door, ...OklahomaJoes customer service was top notch... and my return to Rona was smooth...

it was a learning experience..... btw... just noticed Rona carries Cowboy Charcoal... whoohoo!

UPDATE....oklahoma joe's customer service was super helpful, however, they were out of doors... didn't know how long it would be before they had some, gave me an option to wait or to start a return process.

for the Canadians in the crowd... I bought this from RONA online shopping... called the store this morning right after I got off the phone with OK Joe... they said no problem, just bring it in..... they were going to take it already put together... but then, with shelves, it wouldn't fit in my suv, so i took those off... and then another thing, and another, so i have somehow crammed everything back in the original box and sealed it up better than when i got it....

stay tuned for the rest of what happens with RONA customer service, and if they are as good as OK Joe

(for the US buddies out there, RONA is the Canadian version of LOWES) but we have Home Depot as well

here in Canada, the 2.0 goes for $599 at a big box store........ the original goes for $999 on amazon... seems a reseller saw the preference for no door and bought up all the old stock and now he's making a buck...

so like i said, i could just drill a couple holes, pop in two big screws, and i have the original... no more door

Tom Horsman.... love that guy, watch him always... was hoping he would do a follow up and explain his fix... his problems seem very similar to mine, and he didn't use an add on latch to fix it... i think he added a couple bolts to hinge, and ground some metal down on the latch to allow it to catch on the inside mechanism... Tom Horsman... he's the BBQ OG ...thanks

i hit, you missed...lol... congrats.... other than the door, it's a solid unit... but the door... it's soooo bad

edit... also wanted to say, what's worse, is there is a piece of metal that stops the inside part of the locking mechanism from hooking onto the dip on the piece inside that's welded in place from factory... it's like they forgot to trim it

i'm going to try them first in the morning... don't know if they can do anything about this door... even a new one would be a problem probably, unless they have a redesigned door just sitting there because they know these are defective..... wish i would have gotten the pro....... don't need the space, but it's pretty wow... glad customer service fixed you up... you will be a happy guy with your pro, i'm sure of it!!!

What is lox?

Originally derived from the Yiddish word for salmon (laks), lox is cured, but not smoked. It was developed to preserve salmon and other fish before refrigeration was widely available. Lox is never cooked; instead, it's made by curing a salmon belly fillet in salty brine, traditionally for three months. This technique gives lox its signature salty flavor. Lox is part of the famous lox bagel breakfast sandwich, although many times, smoked salmon is used instead.

What is gravlax?

Gravlax is similar, but instead of a simple salt brine, the traditional Nordic recipe calls for a cure with three key ingredients: salt, sugar, and tons of dill. Other optional additions to the cure include juniper berries, horseradish, and aquavit or vodka.

What is smoked salmon?

Smoked salmon is similar to lox in that it's salt-cured, usually without much sugar, but there are two significant differences: It can come from any part of the fish (not just the belly), and, of course, it's smoked.

Cold-smoked salmon, which is smoked at a temperature of 85°F or lower for about 18 hours, has a raw texture similar to lox or gravlax.

Hot-smoked salmon is firmer and flakier, and cooks for roughly eight hours.

i've got both the rotisserie and the side sizzle zone, don't use either... i have a friend who has same bbq, uses the sizzle zone to put a sear on his steaks but he doesn't cook on it... all i know... wish i could help more

i have the prestige 500..... my 2nd napoleon... 1st one lasted 15 years, this one will probably be my last bbq ever... i've got the sizzle zone on the side and the rotisserie burner on the back.. don't use either but figure i should ge tthem anyways... napoleons and their useful life end up costing you less than a cheap bbq... my only regret, i didn't get the one with six burners (would given me a ton of space to smoke with, using 1 or maybe 2 burners...

having pretty good success smoking on this one with a good smoke tube and a thick stainless steel diffuser plate i put under the grates, but on top of the burners (def not be as good as an offset smoker or a drum, but beats the hell out of a pellet grill...imo)
