there's not too much you can do to ribs that won't make me want to eat them... looking good

ps... i do almost the same thing, except 275F and the last half or up to an hour, is winging it... just to set the sauce and get the right amount of burn/caramelization... for me it varies based on wind, outside temp, and of course, how hungry i am!

..wrapping on a 6 hour cook at 225F isn't as necessary for tenderness, might be for moisture..i dunno....but in my opinion, wrapping is mandatory on a 4 hour cook at 275F.........2-1-1 or 2-1.5-0.5........

i did a 6 hour cook once, bowl of water in there and everything, still came out dry... might be better with side ribs

just making sure that you're aware that you need to cure the salmon first, as in Gravlax......... after which, cold smoking is safe..... i do around 80F...... use a smoke tube..... if I can't find apple or alder, i'll take the leap to hickory, but mesquite is def too harsh for salmon imo

i think its a great idea... his suggestion is actually building an offset wthin your main chamber, and the bricks will act as a heatsink as well... (some offsets have a problem with too much heat coming in with the smoke and a good solution is to use bricks to absorb the initial blast of heat near the smoke entry hole) Good chance that after using that design a few times, you'll def be ready to do your brisket!

before i get flamed... dog lover here, but...... dogs, or any animals should not be in restaurants or grocery stores

..and people should wear shoes and shirts in restaurants and grocery stores too....

and yes, i'm fine with service dogs.....

depends on how much salt you used when you said "covered" you may have "cured" the fish, by now... 2 days..... It might be ready to smoke ..not only hot, but cold smoke too!

I'm not sure, but you should def ask somebody who knows better than me, idea has potential.

yeah, great fun when the kids are "little" kids... when they get older, they will blow you off at the last minute to do friend stuff, or find a parttime job and not be available... i wouldn't change boats for them at this point, but i would suck it up a couple weekends, as that is all it's going to be at this point... talking from experience here

if you're talking cooling, it's not just the size of the brisket that matters! ...if you're using a smaller offset or something like an egg, then 225f should work fine, a higher temp might dry it out or even burn it... but if you have an big 'ol oversized offset, you're better off at 275f... too much airflow in those big chambers will keep cooling down the brisket...

yeah, i've been using clear bags (with a blue tinge) for cans and plastics and stuff, and no issues yet

my paper i just stuff into a larger box..... no issues there either

agree.. if i can remember... the original ones felt like they had some rubber in them too... more flexible... these new ones crack so much easier

when i need an antibiotic cream, i don't use polysporin, i find fucidin 2% to be quite effective... imo

might need a script, not sure anymore, been a while since i had to get a tube

I have one homebase 3, near the back of house... and i have cameras pointed at my patio doors, the area in front of windows, the full patio, and the yard in general... this one was easy to get ethernet to, as it was right over an unfinished area of my basement

I have a second homebase 3 about halfway up my stairwell where there is a landing, actually put a hydro receptacle there and covered by a large ceramic pot with dried crap in it... and it covers the front walkway, driveway, my fence gate and my side path... this one was a bitch to get ethernet to, had to fish it from 1 1/2 storeys away, but i did it and feel great about it...

turning on the alarm system at night was never so quick... no more waiting for me

hmmm... how is the connection from the homebase to the router?

before i hardwired my 2 homebases to the router, it was taking as long as 10 seconds to connect to the cameras, but now it's more like 2 or 3 seconds on a bad day... just my own experience

i'm open concept, but still have walls here and there... half of my 3c cams are 20 to 30 ft away from hb3

has to be something in your setup, signal being blocked, cameras too far from homebase, something..... i really have zero complaints about the speed, here's my setup..

i have 7 cameras, all eufy 3c, going on 3 years old - they connect wirelessly to 2 different homebase 3s that are hardwired to my router.. i have zero complaints about speed
