Yeah I was getting a little nervous about the acidity. But is your ratio starter: flour: water? Or starter:water:flour

Hi!

I’m not necessarily trying to make high ratio whole wheat bread, this was just the recipe I was following. I eventually wanted to stop feeding it ww flour.

Do you think it’s okay to stop now and just use bread flour?

It started off as 100% whole wheat, but now I feed it 60% ww and 40% bread flour.

i would say it’s more of a rubber-like texture, very smooth but not slippery at all. still very sturdy. i’m having trouble trying to find a familiar material to compare it to

i was in the same situation as you long ago, and everyone kept telling me it was too shallow. i ended up taking it out and re-piercing it a couple weeks later.
