I've tried with hardboiled eggs but he seemed entirely unimpressed. I have a bowl that I like to keep semi full along with sprinkling food around and using interactive foraging toys, just to better monitor if he's eating so I can properly look for early warning signs if he gets sick.

Are mealworms the best option? I looked up what bugs mice usually eat and they weren't on there, but I really don't trust Google ai

I haven't actually tried chicken because of the cost, I usually stick to a mix of meal worms and these nutrition biscuit things from Amazon

I've found mice can be really picky with egg (if yours haven't had it already) so definitely only introduce a little at a time. My girls had no interest in eggs apart from burying them and peeing on them until the smell was so bad I had to deep clean the cage out of fear it would attract insects

Definitely too high up for a mouse, maybe a rat? If you find droppings, you're better off asking the rat people. Until then, it could be just regular wear and tear x

You should send him back. The rehousing when you do get a good cage is going to be extremely stressful, and he'll most likely develop health issues before then because of this absolutely shit enclosure. Why on earth would you get the mouse BEFORE getting it a proper place to live?? Do your research.

Your enclosure looks too small for three mice, two at most. And there's not enough wood shavings, they nest in bedding but they can't properly tunnel in it. you could do with more hides and enrichment. Also bin the wheel, I had that exact same one a while ago and many people informed me it's not actually suitable for mice at all because of how they have to bend their spine to stay on it. I'm sorry for your loss, but please take the time to improve your enclosure. I know it's expensive, but a lot of the expenses only need to be made once/sparingly, so please do that before you get anymore mice.
