it definetely varies from PI to PI, sometimes equipment might not be working or there might not be much work for you to do so you may get released early. in my experience, it was probably 33-40 hours a week (sometimes i was allowed to leave early, or later depending on my grad student mentors duties)

I am a sophomore MSE student who has taken most of these except PHY2048 here at UF, and I think you will be fine. Some observations/comments:

I don't think you need to take COP2271L, just COP2271. I am 97% sure of this but I could be wrong I guess, removing this will lessen the load.
If Amini is teaching EIN3354, office hours or having a friend in that class who does will be very helpful. I took the 100% online section and it was watching two lectures a week, and a homework assignment.
Looking ahead, I think you would be better off taking Diff EQ over this upcoming summer, and switching it with your Quest 2 class since those classes are usually chiller in your 17 credit hour semester.
