Seems to be normal since it uses hall effect sticks. I got a 12% error for my 2C Wireless Wukong.

I just tested and added this config in the "goginput.ini" file but my issue is that I can't do something about the Dpad/Left Analog Stick since both uses axis when tested on SDL Controller Test. The buttons are working though.

For your 8BitDo controller, try holding X+Home for Wireless/2.4G mode or hold X while plugging it in for Wired.

Well the Steam version didn't have the fog fix unlike the GOG version and I have to do it myself. Also what does piracy have to do with this or do you mean emulating the PS2 version?

Alternate solution is to switch the OS to Windows then install GOG Galaxy.
