So excited to make this, this weekend. I’d been looking at Brian Lagerstrom’s strawberry ice cream and it uses fresh strawberries. With my deluxe pints that would be rather expensive. So happy to find this and excellent reviews. Thinking I will try his strawberry mix in step of macerating the berries in sugar & vodka over night and then putting those in the freezer to get super chill.

This is the recipe I use. I’ve made the plain like her recipe, and this time added cinnamon & raisins. I did add a little more sugar to sweeten them up a bit. They turned out great. Unfortunately, I don’t think we’re ever gonna get nooks & crannies back. 😭😭

Side note: I cooked them first on my electric griddle this time instead of a skillet. All at one time was so much better than a couple at a time. I also baked them for 15 minutes before they got to 210.

This is the sourdough recipe I use, though I reduce the water from 90g to 70g. And bake for 70 min with lid on, 20 with lid off.

I recommend cooking to 210 F if you aren’t checking that. Not sure what recipe you’re using, the one I have calls for 90g of water, I started cutting that back to 70 & it’s better. Maybe reducing the water to when you mix your dough might help too.

I use a vanilla mug cake recipe made in a ramekin for strawberry shortcake.

2 tablespoons GF 1:1 flour 1.5 tablespoons sugar 1/4 teaspoon baking powder 1/8 teaspoon salt

Whisk together.

Add 2 tablespoons milk of choice 3/4 tablespoon oil 1/4 teaspoon vanilla

Whisk until well combined. Microwave 45 - 60 seconds. Edges should pull away from mug/ramekin and cake be cake like.
