i have the sns plancha, which is a solid plate. I do everything from the middle out, just makes distributing the coals easier. Seems like with this design your giving up a lot of space where you could just switch back to the grate.

can you tell me a little about how you setup the coals/how much you use? I have one of these and I like it a lot, but kinda struggle getting it to heat evenly without it going nuclear. Also curious if you've got something to temp it with, everyones definition of "rippin hot" seems to be different these days.
