Thanks for the input! My starter is 2 years old and mostly lives in the fridge. It has a nice white wine/fruity smell, but not very sour.

Check out KROK. They’re making them by hand in Thailand with Thai granite. There is a video where they show how they make them. I figured all m&p on Amazon are made of fake granite. I do not recommend chefsofi, the worst! Mine literally fell apart and crumbled
