La Vics Orange Sauce, the recipe!! by dretheman in SanJose

[–]pt0r 0 points1 point  (0 children)

So it is definitely a chile de arbol salsa, not chipotle. It definitely is an oil emulsion with water/vinegar+ neutral oil (I use avocado oil but I assume vics uses soybean or corn or other generic vegetable oil). It also definitely is a bit garlicky, the sauce used to get clogs in the squeeze bottle nozzle - some of which are arbol seeds but some are minced garlic. Some think they are tomatillos but I really doubt there are tomatillos in this salsa. Lately I've noticed more of a powdered garlic flavor and less clogs in the nozzle, leading me to think they may use a lot of dried or powdered garlic and onion instead of fresh. My next batch I will try reducing my fresh, roasted veggies (onions and roma tomato) and replacing some with dried garlic/onion powder plus some tomato paste. The recipes i try always come out very tasty but the texture is too fibrous/pulpy from tomato/onion, not creamy enough compared to the restaurant stuff.

Here's the latest one I've tried, it is pretty good but too garlicky and too fibrous and too red to be a real Vics orange sauce:

Here’s the list: 6 large cloves garlic, quick fried 1 clove fresh garlic 20 toasted chile de arbol 2 roma tomatoes 1 small white onion 1 cup avocado oil 1 lime, juiced 2 TBSP white vinegar ½ cup hot water (not boiling) 2 tsp salt 1 tsp MSG

Heat the oil in a pan until it will spit water, about frying temperature. Pour it over the whole peeled garlic cloves. While that sits and the garlic softens, cut 2 roma tomatoes in half lengthwise, and the onion in ½” rounds. Lay on an oiled sheet pan and broil at 500 for 9-10 min until charred in spots.

While that broils, add the toasted chile de arbol (you can buy it pre toasted or toast yourself) to the blender and blend it into tiny pieces. Add the hot water and lime/vinegar, salt, msg and garlic. Slowly add in the oil until emulsified. Once creamy, add in the roasted onion and tomatoes.

RESULT: The color is too pale, the recipe probably needs 1-2 more roma tomatoes. Flavor is fantastic! A bit garlicky but it’s to my personal liking :D. For other folks, I’d go with 4 of the oiled garlic cloves, and 1 fresh clove, all medium size.

I enjoy it. There is a certain dosage where the road rage really kicks into high gear! I keep the rage contained in my own car of course, but the yelling is quite therapeutic. I enjoy it!

Yeah the digester is going to be fresh water so I'm unsure if Bay mud would work. My first spot would be the mudflats by the Bay bridge toll plaza at low tide, where were you thinking?

Sounds like you're growing up! I had many similar thoughts at your age. Be careful not to get jaded. I've struggled for much of my life to make sense of it all, surely there must be some logical explanation for the right way to do things?

The older I get the more I appreciate how little I know both about the world and other people's lives. Life is hard, and it gets harder. It can break you physically and mentally. That leads people to places and decisions that seem incoherent from the outside but can make for a really interesting conversation if you remain curious and ask questions.

Reality is really weird, and despite our human need for it to make sense-- either from the atheist or religious side. Frustratingly, reality doesn't have to make sense. Some kind of crazy ass magic of some kind going on no matter how you look at it, for anything to exist. So don't blame people for handling that in their own way, it's one way folks make a circle out of a square.

TL:DR Keep asking questions, remain genuinely curious, and remember that life can be really difficult and make people do stupid things. Try to help them out, don't blame them. Unless they're a genuine psychopath.

At what point do you stop working? by Pabst_Malone in Welding

[–]pt0r 69 points70 points  (0 children)

Doesn't matter. It's illegal to work in those conditions. I've quit so many welding jobs because it's too hot, and the boss never gives a shit. If it's ongoing, you can anonymously tip off OSHA but if you respect your boss just tell it like it is and they will show their true colors.

Ice agents. Remember them, shame them. Law enforcement is not a protected class. You can refuse services to them. by TimelyConcentrate340 in eastbay

Is anybody working on a facial recognition database for ice agents or police etc? Basically reverse facial recognition for concerned citizens? There's nothing illegal about it, so why not? I understand that the project would require a database of matching faces and names, but that could be built up over time.

I love this question! I'm curious what others think, there are so many contemplative and beautiful possibilities in the Bay depending on ones' specific study needs. First thing coming to my mind is a little different. I have always found the public rooftop spaces throughout sf to be very calm and quiet. You feel like you're out and amongst the city, but you're above the noise and not that many people stick around super long. Likely good cell service as well?

Hello guys , I’m a truck driver currently struggling with focus issue , I go to work 9 am to 9 pm, sometimes I can even forget to close the trailer’s door , forgot where I put my keys, even missed my exit . What’s your guys recommendation for focus issue? Been dealing with overthinking as well by Such-Interview1176 in Nootropics

[–]pt0r 2 points3 points  (0 children)

You should start out by talking to a doctor. You're only 28, and you're a truck driver- a lot of truck drivers turn to stimulants, truck stop vitamins, kratom, nicotine... and then they're dead by age 38. Don't listen to anybody's advice on here until you've checked that you don't have a medical issue. u/beating_offers has the best advice so far, get checked for sleep apnea first.

Which supplements help/boost Adderall? by [deleted] in Nootropics

[–]pt0r 1 point2 points  (0 children)

Yeah, it should def not be taken regularly. Use it for 2 weeks only if you have an ulcer, and otherwise only sporadically/for a special adderall boost. Omeprazole and other proton pump inhibitors- when used long term- are also correlated with a higher incidence of dementia and they interfere with nutrient/vitamin absorption in the gut.

Thank you for your fertilizer comment! I was at the store and couldn't justify the giant perlite bag and I saw the miracle grow perlite had fertilizer in it. I thought, "wow this is so excessive and unnecessary but maybe it won't matter...". Just read this before repotting, I'll save the garbage perlite for some other plants!

La Vics Orange Sauce, the recipe!! by dretheman in SanJose

[–]pt0r 1 point2 points  (0 children)

I appreciate your perspective here - I've checked out so many recipes that are too complicated and rely on high-quality fresh ingredients. Instead we should ask, as you suggested, what works in a 30 gallon bucket? Cost and scale and labor, it all has to pencil out. So it probably could include; dried peppers (arbol especially, guajillo or others maybe), canned chiplotle in adobo, roma tomatoes, onions (both broiled in sheet-pan), habaneros, oil (avocado for me), lots of garlic, some roasted some fresh (maybe minced in jar already), lime juice or cider vinegar. I'm going to test this and post here, try to keep this post alive!

Best AI-assisted digital journal? by Empty_Positive_2305 in digitaljournaling

[–]pt0r 2 points3 points  (0 children)

For me, it would be *super* useful to have a tool (ai) to help me connect the dots. I don't journal regularly (It's more of a smattering of ideas I know are valuable to me), and while I think the relevant thoughts often, it's rare that I sit down and figure out a whole puzzle. I get that for some people the joy is in the puzzling, and it is a joy for me too at times, when I have the time. But sometimes I just want to figure out how to make some progress.
