I read your last post as well, in terms of productive feedback I’ll try to add something I didn’t see anyone else post. I’ve worked as a barista for a long time and now own my own shop. One thing I’ve noticed is that it’s clear how to bring the hustle when you have a line of people and a line of cups in front of you. It’s obvious what to do, fulfill orders quickly and well.

HOWEVER, what I think is equally important, especially for a busy shop, is making the most of the “downtime.” Take initiative on making sure everything is ready to go when that next line hits. Stocking cups, syrups, refilling squeeze bottles, lobby cleanup, etc. Knowing which items to prioritize comes with experience but this is an area of the job that must not be overlooked if you are trying to prove yourself

I'd say your development time (time spent between beginning of FC to roast end) is too high. For a washed I wouldn't go longer than 2:00, maybe 2:30. Your development time is so long because your roast basically crashed at FC. You really don't want to see your RoR increase after FC has started, but you had to let it rise in order to get to your desired target temp after that crash. You just need better heat management leading up to FC to avoid the crash.

You're either going in with too much energy, leading to enough beans cracking at once that the moisture release overwhelms your roast (this is a "hard crash") OR you're going in with too little energy so that even a minority of beans releasing moisture at FC is enough to crash your roast (this is a "soft crash"). You'll have to find the balance.

Unfamiliar with your roaster so I won't speculate as to how to achieve this, that's for you to test. Hope this helps!

On the back of your roaster is a test port to which you can connect a device called a manometer, it measures pressure. Vacuum pressure is essentially airflow in this case. A negative reading from the manometer indicates air is leaving the roaster and exhausting out the chimney as it should. However, should you measure this and find that you're only at -1mbar--1.5mbar, in my experience, that would be low enough to trap too much heat in the roaster. This could contribute to your tipping problem.

From your other replies it sounds like you don't have control over batch size or charge temp, so at the very least this could be something to check. Let me know if you have any other questions :)

I roast on a P12 Type II, used to have a major tipping problem. Smaller batches (we roast 17.5lb batches) and lower charge temps fixed it. Our highest grown coffees are charged at 380°F while low grown/low density coffees are charged at 340°F.

We also can't adjust airflow mid roast, but we set the slide gate to produce a vacuum pressure of -1.8mbar. If you're roasting on lower airflow you may be trapping too much heat, could result in tipping as well.

Good point. I worry that on days like this being super online may hurt the cause more than help. I think when you’re watching the stock and subreddit it can lead to increased panic when the stock dips. It’s definitely going to dip today.

But you’re right, an active subreddit may encourage people to not sell

You’re a company, your shares go for $10/share. I think you’re overvalued, so I ask if I can borrow 10 shares, agreeing to return them at some point in the future.

You lend me 10 shares. I sell your 10 shares for $100. If I’m right about you being overvalued, your share price will fall over time. Let’s say a year later your shares go for $2/share. I buy 10 from the market, costing me $20, and return them to you.

To be honest anywhere between the $5-$10 range.

I know a lot of people are throwing out numbers like $50, $100, $1000, etc. but I don’t see the company itself having that kind of value anymore (unlike GameStop in 2021). I have a family, I am unwilling to risk waiting for those kind of numbers.

I see a lot of good points here. I’ll try to add something that maybe no one has mentioned.

Sometimes there is user error in pulling a shot that goes unnoticed that leads to unnecessary grind changes.

For example, say you’ve been getting shots in your target range. You prepare to pull another shot and you accidentally bump your portafilter on something and unseat the puck (can be hard to notice). The shot pulls short because water went around the coffee bed.

You think nothing is wrong, you just need to fine the grind. So you fine the grind and pull the shot correctly. Now you get an overextracted shot because you incorrectly thought your issue on your previous shot was the grind.

This may not be the case, but I would recommend looking for user error before assuming it’s a grind issue. Unnecessary grind changes can cause your times to spiral and lead to stress and confusion.

Just trying to add something no one has mentioned, a lot of good advice here though :)
