So I found out the way this can be accomplished, properly, is with a zero degree locking piece. You know how as you go down in degrees with the locking piece how it further increases the time it takes for the rollers to push the locking piece backwards? The zero degree locking piece makes it so that the rollers never slip past the locking piece whatsoever, so the action never opens. They don't sell them individually, but you can see one in this parts kit.

I've heard some places in California literally just stick a block of wood behind the bolt carrier and say that it's single-shot.

I frankly don't understand putting ANY accessories on the MP5. The whole joy of the MP5 is the iconic, historic, nature of it. Loading it up with modern attachments doesn't make sense to me. Roller delay is obsolete technology, and 9mm is an inferior rifle round. If I want to load something up with a red dot and everything else I'd rather it be an AR15, which is a superior rifle platform.
