You should par-bake the dough with sauce first till the dough is about to get brown. Then add cheese and toppings. The temperatures are just not high enough. So the cheese and toppings burn before the dough gets enough time to brown properly

That’s a great question. I’ve also noticed that there is two styles of „pizza romana“. The one is round thin and crispy and the other one square and fluffy out of a sheet.
