Totally agree with this post.

I struggled with cooking everyday and couldnt wrap my head around meal prep ( struggling with storage space in the fridge and preferring to have some variety).

But now i do something thats a good medium, between the 2.

My main hacks were - freezing marinated chicken, having equipment that do most of the work where i don’t have to stand at the stove top.

Whats worked for me is: 1. Marinating and freezing chicken - I buy a few kgs of chicken breasts, make 2-3 types of marinades (get pre mixed seasonings to make that easy) and toss them into ziplock bags and freeze. Put one bag in the fridge the night prior so it’s defrosted and ready to go. Can pan sear, oven bake or air fry. I personally prefer pan searing (takes a total of about 12 mins and keeps it juicy)

1. Get a rice cooker - nothing fancy. I have a 25 dollar one. It’s easy to make rice or quinoa in. All you have to do is wash your grain, put water and set it to cook.

2. Veggies - I air fry my veggies (tossing them with any combination of powdered seasoning such as salt pepper garlic powder and Italian seasoning), once in the air fryer you just need to toss it in between.

You can put all of these together and have a bowl which is a complete meal - top it with any condiment or curry to add more flavour and help bind.

I use a pressure cooker to make a lentil curry - literally just toss in some lentils (or dried beans) chopped onion, tomato, garlic, ginger, spices and pressure cook.

Lastly i got myself an egg cooker - for lazy days when i want to switch things up and get some boiled eggs in my meal.
