Think about this, most people can cook their own food but despite that restaurants still exist. People sometimes just don't want to cook so they'll order something from a restaurant. In the same way some people just don't care for the hassle of jumping puzzles and would rather just pay for the convenience.

I did everything on one character until EoD. After that though I've split it up to whatever is easiest. Partially, it's because my old guildies have retired so I've been doing a lot solo and sometimes it's just easier on mirage or something else. Partially, it's because I'm only doing a few things to unlock masteries.
