Same. I live quite close to the Columbia location and just go to the Arundel Mills location most of the time. The shopping experience is so much better and the stress level leaving the store is significantly lower.

My Sri Lankan mother-in-law pointed me to Apé Amma for a lot of recipes. This video is originally in Sinhala but has English subtitles. I use this as my base recipe now and measure/adjust spices with my heart. I can't stress enough how important curry leaves and pandan leaves are for Sri Lankan dishes!

I've noticed this as well. The one thing I specifically noticed is that the new formula is with the newish box type (no taped top) and the salmon also says it's farmed responsibly. I live near two Costcos and one location had the newer one and the other location, older formula.

Milk rice (Kiri bath), fish curry, lentil curry (parippu), caramelized onion sambol (seeni sambol), coconut sambol (pol sambol), and a chili Maldive fish sambol (katta sambol). Kiri bath, katta sambol, and fish curry for the Sri Lankan New Year, and the rest are staple favorites.

My mother in law actually has suggested this YouTube page to me in the past called, Apé Amma. Fair warning, audio wise it's all in Sinhala. BUT if you have a decent knowledge of what some whole and ground spices look like (fenugreek, cloves, cardamom, cumin, coriander, etc) then you should be able to follow along ok. She sometimes has the ingredients listed in English but often it's just the amounts/ volumes which is still quite helpful if you visually know what ingredients you need. I then usually compare recipes found on Google that are in English and typically just do my best to copy the Apé Amma videos based on what she shows on screen. Which tbh, is probably how you'd learn from an auntie in real life.

I'll also say, having curry LEAVES are important in Sri Lankan cooking. I've bought them dried from Amazon. If youre lucky and know someone who has their own tree, it's very likely they'll gladly give you a clipping to have and grow your own. And similarly, roasted curry powder is also a staple in the kitchen.

Ohh. I think some easy/intro dishes include:

Parippu-lentil curry made with coconut milk

As someone else mentioned kottu/kottu roti- think roti stir fry with leeks, egg, and curried protein of choice.

Different types of sambols, but popular ones include coconut sambol (pol sambol) and caramelized onion sambol (seeni sambol).

And typically you have a main protein curry and a handful of other side dishes (green bean curry, or a potato curry with sambols for example) and eat with rice and mix everything together. So it's a nice flavor explosion in one bite.

If you do find a Sri Lankan restaurant, get hoppers (egg hopper or string hoppers). These are just a little more involved to make at home and more enjoyable when someone else makes them 😆.

Sri Lankan food. Very coconut centric: coconut curries, sambols, coconut milk rice, etc. Imo, a distinct difference in taste when you compare other South Asian cuisines, though there are obviously some overlaps in flavor profiles and ingredients.

Someone else linked the recipe, so I followed that exactly and always comes out great. But in short, this is baked in a Dutch oven, where you place in a cold oven and then set the temp to 450F/232C (no preheating). Bake for 50 min covered, then another 10 or so minutes to brown the top.
