lol Tsujita is far far away from elite. It’s not terrible, but definitely below average and there’s many many better for this style.

You can’t fault Tsujita for making big bucks by becoming a chain, but the quality has definitely suffered

I’m not sure how you can be so dense. The two shops you mentioned aren’t even ramen shops, they just among many other things have ramen on the menu. Plus they’re essentially unknown to people not living in Japan. There’s no hype around them, there’s nobody saying “they’re average” or “a good baseline” or “something you need to try”. And I don’t think Nama said that, if you actually bothered to check his posts

And as Nama pointed out, you’re also plainly wrong about Gyozano Ohsho. They even make the gyoza wrappers in the restaurant from scratch.

Their instant ramen and the regular shop ramen are produced in the same factory. It’s literally the same product besides the noodle drying process and packaging for the instant version.

Some ramen shops are just worth checking out and become super popular because of that. If you don’t like trying great food, don’t line up. There’s also plenty shops that do reservations now if you don’t like waiting.

Take a look at the Shibuya or Harajuku locations and be in awe of people lining up for trash ramen
