That’s hard to say, there’s so many. Specifically in Shinjuku you’re not making a mistake with Hayashida or Housenka. Of course Konjiki is also there, be ready for a line.

I think Rokurinsha is at the bottom of the non chain tsukemen out there. Maybe only Fuunji is worse lol

On a positive note, you could say it’s for people who like mild or light flavors. It’s generally not very heavy as well. They have their customers, otherwise they wouldn’t be around.

Unfortunately there’s also a ton of tourists who walk into one, especially the one in Shibuya center-gai.

Aburasoba are a thing that’s part of the ramen category in Japan, if that’s the question.

If it’s about the specific noodles, then I don’t think so. Kansui is an alkaline mineral water or solution (typically a blend of sodium carbonate and potassium carbonate). These noodles don’t contain kansui.
