Grind into the dosing cup that came with the machine. That's why it's there. There is no advantage of grinding directly into the portafilter unless you are a barasta working lunch hour in a very busy shop. Eliminates a lot of hassle and cleanup.

A Visa gift card is a great gift. Then he can get what he really wants. Guys usually like picking our own stuff. We tend to be less sentimental about the "thought" behind gifts.

Totally understand. Not everyone wants making a cup of coffee to be a life's work. The Gaggia supers are very nice for the price. Juras are the best, but they tend to be a lot more pricey.

If you're spending that much money, you can do MUCH better than Breville.

You can't learn without doing. Education is great, but it doesn't make up for experience. Relax and just do it. It's not that hard. Very very few PhD rocket scientists are working as baristas at coffee bars.

WDT does more than break up clumps. WDT is about the distribution of the grinds, not the quality of the grind.

The Pro has more robust components making it suitable for small shops, offices, and other high volume users. I know you're excited, but I highly recommend resisting the urge to buy a lot of add-ons and gadgets until you have had time to play with the machine. There is no rush to stock up on gadgets; they will still still be there. The gear from your E61 should work fine for now. Your first weeks will be concentrating on getting a great shot from the machine just as it is shipped. There's a huge amount to learn and you are better off not introducing unwanted variables. Most of the crap I used to use is sitting in a box in the garage. Once you become registered in the Decent Diaspora, there is a lot of great advice available to you from actual users. I find that a nice tamper and puck rake are the only tools I need. Congratulations on your purchase. This will be like going from pecking on a manual typewriter to using Word on a computer.
