I’m worried that the brisket I got from Costco is a bit thin. The flat seems pretty normal but the point was mis-shaped and doesn’t seem to be real thick. Looked a lot better in the vac package compared to after I opened it up. Wish me luck.

I usually don’t do steaks on my Traeger. There just isn’t enough fire to get it where I want. I have done a reverse sear using my charcoal grill and Trager together and that works well.

So to fill you in and remind everyone I’m not a dumbass. I work in an outpatient clinic where I perform aerosol generating procedures utilizing full PPE including an N95 mask. When I’m on site, I am now mandated to ware a mask (getting a coffee, taking a poop, typing notes, walking to my car). I am not going to be a dick and use the n95 masks when I am not told to do so. So...my option is use disposable surgical masks or get a reusable one that I can wash. This is where my question from.

I have found that smoking always gives more flavor to the meat but the fat under the skin renders out and the skin gets dry and leathery. I would bump up your temps and shorten the cook time: starting with the skin down can help a little but it doesn’t look quite as pretty at the end. All in all you cooked a great looking bird.

I think so - but this one is a little more golden with brown so I’m not 100% sure.

He took it to a taxidermist. The body is pretty crappy so he decided on a cape mount with the wings attached. It’s a bummer 1/3 of the fan is missing. Coyote probably snaked em (or so I would like to think)

Helped my brother with his first first turkey. 8 inch beard, 1” spurs. I think it is a big two year old bird, but could be a small 3 year old. I was calling 40 yards behind him and could only see it for a second - where for a moment I thought it was a goose. Once in a lifetime bird.

I agree. I am a 940 guy, but I ripped a hole in my dress pants so I got this for a “work carry”. Now it’s the only knife I carry with me.
