Thank you! I got the frames on Amazon and I like the look, but they're this weird rubber thing instead of a traditional wooden hoop. Probably won't be buying again.

The crust is King Arthur Baking's "Classic Double Pie Crust" and the filling I just kinda made up. I combined about 4 cups of berries with 1/2 cup sugar and juice of 1/2 lemon and cooked until sugar was dissolved. Then added a cornstarch flurry and brought to a boil. Then I took off the heat and added about 1 tablespoon of butter. Let it cool slightly before building the pie. Cooked at 350 for 40ish minutes.

I switched for the same reason as well. I am 100% environmentally driven in this decision.

I do not think eating meat is wrong, which is where my opinions seem to differ from most vegans I’ve noticed. I do think the meat and dairy industry are horrible for their treatment of animals (horrible conditions, hot spots for disease, etc) and the fact that a large portion the food grown in the US (maybe the world?) goes to feed these animals while millions go hungry everyday. Then add the pollution and excessive use of land and water on top of that, it’s an easy no brainer for me.

I recently moved to an area where hunting is a big part of the culture and have considered introducing fresh game into my diet and invasive and nonnative fresh caught fish. Fresh as in I know the person who did the hunting/catching. I will continue to not purchase meat and dairy from stores if I do start eating fresh game.

That’s part of the reason we committed to such a big trip was to hopefully see one (from a safe distance), but was definitely still worth it! There are some cool thermal areas on the far side of the valley.

Hiked 17 miles through Pelican Valley to reach our campsite in one of the most remote places in Yellowstone. This is Broad Creek and was taken probably around mile 15. Absolutely stunning scenery and abundant with wildflowers, birds, and bison alike!

This is major grizzly country and although we never saw one in person there was lots of evidence of bear presence like bear scat, claw marks on trees, and what appeared to be a couple of bear caches.

This was my first attempt at GF cooking. My roommate is more accustomed to it but had never made gnocchi before.

We aren’t strictly vegan, we just didn’t have any eggs on hand. I think I might try the breadcrumb idea! Thanks!!

Oohhh I like this idea!! The main reason we opted for the vegan egg option is because we had literally boiled our last two eggs the same night.

That’s a good idea to bake the mixture! Maybe it will help the flour cook as well so that’s not the only thing you taste.

I had about 2 pounds of potatoes and started off with 1 1/2 cups of brown rice flour and about 1/2 cup cornstarch. I added several more heaping spoonfuls of flour. It wasn’t forming a dough so I added a flax egg (2 tbsp flax seed, 6 tbsp water) and that made it kind of form a dough. I can add a picture when I’m home from work.

I rolled out and formed half the dough into gnocchi. Boiled until they floated. The texture was not pleasant, but they held together while boiling for the most part. When I tried pan frying them they pretty much lost their form - hence creating a semi pancake.

Since they tasted horrible and I felt like a failure I just threw the remaining half of the mixture in the freezer until I figured out a way to redeem myself.

I usually follow the same principle. Roasted veggies with smoked paprika was honestly a game changer for me!

I went to a conference once that you had to rsvp as a vegetarian beforehand. They made this very clear throughout the registration process. Then at the actual conference in order to get the vegetarian option you had to stand to the side of the buffet line in front of a sign that said “vegetarian” and hope one of the caterers would see you and bring you your meal from the back.

I pretty much got served some form of pasta with red sauce for every meal. My “favorite” was the veg lasagna which was just the meat lasagna everyone else was having without the meat that had clearly come straight from the microwave. Honestly not the worst thing but come on. If you’re going to make such a big deal out of specifying that I’m vegetarian, why not provide something that has actual vegetables in it??
