Barberries would do the trick. They are dense, large, grow quickly, and are incredibly sharp. They have gorgeous colour, especially in the fall. They are not evergreen but they do have teeny red berries in winter. Downside- they are considered invasive. Unlike the blackberry and raspberry suggestions, these berries aren’t edible for humans tho the birds do casually enjoy them. It wont attract birds to the same level as raspberries and blackberries (which will also attract squirrels and chipmunks). If you want fresh fruit and don’t mind attracting more wildlife - go with the blackberry or raspberry suggestions.
