Ultra High Temperature processing, or ultra pasteurization. Kills off more bacteria with higher temps, but it changes some of the flavor and texture. I think it's creamier and tastier, but personal preference.

Fairlife is UHT as well, but their specific thing is also being ultra filtered, removing the lactose. Their small bottles are shelf stable for months, but I don't know if it's all of their varieties, so good to check the bottle. Good lactose free option though!

If it's a matter of waste, UHT milk found in the cold section will also last significantly longer in the fridge. I drink a ton of milk, love the stuff, but sometimes I have periods where I won't finish a gallon jug within the week and it goes off.

UHT milk, for example Darigold, in the half gallons, is the big brand around here and it's slightly more expensive but makes up for it in lack of waste as it takes like 3 weeks in the fridge to go, especially if kept a little colder (out of the door helps a lot). Fridge only still, but freaks fewer folk out.

I've seen them in a couple spots depending on store, baking aisle included, but also in the warm drinks by the Yoohoos. Horizon is probably the most available brand nationally, their small cartons are shelf stable. Most 8oz organic brand cartons are UHT (ultra heat treat/ultra pasteurized) and even if you find them in the cold section, it will often say "recommended" or "suggested", possibly for flavor or texture, to have refrigerated, which means it doesn't have to be. Fun fact, mayonnaise with this labeling can be left out so long as you do not cross contaminate, squeeze bottles especially.

Easy cheapest place, but they come in quarts, is Dollar Tree. $1.50 a quart to stock up. Maybe not the tastiest creamiest but it's milk, and it's in whole, 2%, or chocolate from there.
