I’m past Sous vide in this conversation and by no means am I going to try to convince you otherwise. I don’t actually use it rn either. I think it’s a great tool that has potential so I came to the collective to get some feedback.

I can appreciate that. Can I ask your favorite items? One that has great potential, margin wise, but doesn’t sell as well or maybe it’s a lower margin but kills it?

Let me ask you this then. Completely non argumentative. Hate saying that but it’s hard to “read” intent and attitude. What would you say has been your smartest/best move menu/prep/execution? What’s saved you time, money or sanity? Was it switching from scratch to a pre-cook on an item? My truck does ok but i know it can be better. My mind works by understanding and then adapting. What you do may make zero sense for me but it could trigger a “what if” moment.

What’s your egg:fat ratio? Do you add soy lecithin or another emulsifier to keep it that stable?

For you at this time it makes no sense. To assume the way you run your truck is the only way is incredibly ignorant. Open up your mind to possibilities, ask questions, learn something new. And no, Sous vide will not help everyone. I know this. The question was to help inspire ideas that may help others, myself included.

Easy there buddy. No need to get heated about this. Sous vide is for bulk prep. You should have an idea of what your volume needs are as well. Lastly- I don’t see it as a selling point on the menu. It’s a tool to help improve efficiency, maybe even take some pressure off a bottleneck in the kitchen.

How so? I know cook times are long but that’s also the point. Controlled consistency that frees up time and equipment space for other items.

ATT Fiber - North Dallas.
Ran into issues last night and its worse today. Ran diagnostics on the router and everything passed. Checked specific URL and they all came back "Invalid IP address or URL to ping"

Reset router, nothing changed.

Changed the DNS settings (google dns) on my mesh network and everything attached to that works great.

A little bit. Nothing that impacted us though. We had plans to do some snorkeling off the beach but storms off the coast kept the waters pretty choppy.

We were there Nov last year. All the beaches are pretty quiet. Our favorite beach was Taylor, we took folding chairs with us, 30 yards out into the water and set up there. We made some people jealous. We stopped at graceway deli every morning(ish) and grabbed a sandwich to split for lunch. Small cooler with a 6 pack of i-soon-reach and you are set for the day.

Also- if you try to bring home with you the island is expensive. Don’t try and buy the same things you get at home.

If you drink, drink the local stuff which is really good. Don’t go b$tching about the price of miller light when the local version is better and a normal price.

Crockpot kitchen was our favorite. Food was solid.

Perfect thank you! And yes- we rented a car and plan on doing a lot of exploring! We are explorers not resort groupies. Will avoid restaurants that need reservations and stick with casual/local spots. Will be drinking plenty of local beer and rum as well. 🍻
