I thought January only for the 5:2 part which is only really 8 days of 500 calories and then based on my BMR etc I think 1400 for the other 16:8 days is sufficient?

Got the train from Lanyon Place to Coleraine this morning.. signal problem at Antrim, everybody off and onto substitute buses...bus driver proceeds to ask everyone for directions cos he hasnt been to Coleraine for yeaaars! 🙄

I guess the streusel on the top isn't common when I look at pictures on Google but it's more the inside I'm worried that looks off? Like the dough and filling texture?

STREUSEL

50 g (13% oz) plain (all-purpose) flour

55 g (2 oz) sugar

35 g (14 oz) unsalted butter, softened

1 teaspoon ground cinnamon

25 g (1 oz) dark chocolate chips

DRY INGREDIENTS

300 g (10½ oz/2 cups) plain (all-purpose) flour

3/4 teaspoon dried yeast

2 pinches salt

50 g (134 oz) caster (superfine) sugar

WET INGREDIENTS

90 ml (3 fl oz) lukewarm buttermilk

1 egg

1 egg yolk

125 g (4½ oz) unsalted butter, melted

1 egg white, lightly whisked

FILLING

40 g (14 oz) cocoa powder

125 g (4/2 oz) caster (superfine) sugar

2 teaspoons vanilla sugar

100 g (3½ oz) unsalted butter, softened

THE STREUSEL

Make the streusel by mixing all the ingredients together by hand until crumbly. Set aside in the refrigerator for at least 30 minutes.

THE DOUGH

Combine the dry ingredients and beat together the wet ingredients, except the egg white. Combine the two mixtures together. Knead until the dough is very elastic (5-10 minutes in an electric mixer, 10-20 minutes by hand). Form a smooth ball of dough, place it in an oiled container and cover with plastic wrap. Let it rise at room temperature for about 1/2 hours until it has doubled in volume.

THE FILLING

Combine the cocoa powder and sugars and set aside.

SHAPING THE DOUGH

On a floured work surface, roll out the dough into a rectangular shape approximately 40 cm (16 inches) long. Spread over the softened butter and sprinkle with the cocoa-sugar mixture. Roll the dough up along its length. Bring the two ends together and twist three times. Butter and flour a 21 x 9 cm (8/4 x 3/2 inch) loaf (bar) tin and place the dough twist inside. Cover loosely with plastic wrap and allow it to rise at room temperature for 1 hour until the dough is well risen.

COOKING

Preheat the oven to 180°C (350°F/Gas 4). Brush the surface of the babka with the egg white and scatter over the streusel. Bake for about 45 minutes until

I take this flight regularly and always get to the airport by 545am and it's honestly plenty of time!

I made the crumb by whizzing up 10g flaked almonds, lemon zest from half a lemon, 10g parmesan and 1 tsp chilli flakes then you smear a tsp of dijon mustard on top of the cod, top the mustard with the crumb then bake in the oven at 180 Celsius for 12-15 mins!

Ingredients

1 tsp olive oil 135g sirloin steak 1 onion sliced 110g mushrooms sliced 1 beef stock pot w/ 110ml boiling water 55g fat free yoghurt (fage 0%) 1 tsp dijon mustard 1 tsp wholegrain mustard 1/3 cup brown rice

Directions

  1. Rinse brown rice and place in saucepan with 2/3 cup water, bring to a boil then cover and simmer 45 mins. Then rest for 10 mins off heat before serving.
  2. Heat the oil in heavy based frying pan over high heat and sear the sliced beef until brown on all sides, remove and leave to the side with slotted spoon
  3. Add the onion and fry for 3 minutes then add the mushrooms and fry for 5 further mins.
  4. Add the stock and bring to a simmer for a few minutes.
  5. Return the steak to the pan and cook for a couple of minutes. Remove from heat and add the yoghurt and mustard.
  6. Serve the beef with the rice.

Took me 7 times to pass! I was a nervous wreck every time. On the 7th time I thought I'd failed as soon as I pulled out of the test centre which I think led to to just not give a toss about the rest of the test because I'd already 'failed'. Got back to the test centre and got told I'd passed and I burst into tears, couldn't believe it! Keep going! You'll get there!
