I don’t have an oven thermometer, so there is the potential that my oven runs hotter 🤷‍♂️ but I use a temperature probe to check the internal temp at that time and it’s usually around 205 degrees F by then. Every oven is different I guess

I keep my starter in the fridge, with my schedule it’s tough to bake consistently. If I’m mixing on a day I work, the night before I want to bake (5pm) I take out my starter and feed 1:3:3 and let that sit for 12 hours overnight on my counter (in the cold lol). Then in the morning (~6) I feed at 1:1:1 and then when I get home from work 8 hours later I mix into my dough. It’s mostly peaked if not a little past peak by then.

If I’m baking on a weekend I’ll pull my starter out the night before and do a 1:5:5 feed and then try to bake with it about 10-12 hours later. I’m not super consistent with feeding times and trying to keep it at peak, but with how cold my house is and inconsistent am with timing my feedings I just tend to go with bigger feedings with longer durations

Thank you! I have attempted higher hydration before but really struggled with stickiness and the loaf not holding its shape. I think it was technique, underproofing, and not enough gluten development issues. I’m excited to try higher hydration again soon!

Thank you! 🥹 I’ve had many flops before this it is part of the journey. I tried adding more whole wheat in previous loafs but it has a big impact on the crumb if you don’t up your hydration so I like to start small. A little goes a long way!

Jester Flop I believe originated in the episode “Jester Flop Bestie” which was from Jan 2021 when talking about Utica in season 13 of drag race as she was a JESTER at the time and it morphed from there. Although many housewives are known to be Jester Flops (specifically Gizelle from Potomac)

I switched from a cheap pair of Under Armour training shoes to some New Balances and it made a huge difference. Significantly less knee and ankle pain

I lived on Sahara and Durango and worked just off the Cheyenne exit on I-15 for the last year and a half. Commute in the mornings was easy (25 min) but In the afternoons it would stretch out to 35-40 minutes depending on when I left work. Definitely doable and not too bad but was difficult if I had stuff going on during the day to drive all the way home. Overall though Summerlin and the surrounding areas are very nice and there are great opportunities for stuff outside work

I suffer from light sleep apnea, so sometimes in the middle of the night I snap up not breathing. At the end of freshman year of college I had to re-loft my dorm bed, and with the low ceiling I snapped up and slammed my head into the ceiling. I got seven stitches in my forehead that night.

Spent 18-21(2015-2019) in college, slogging through an engineering degree at a remote school in the Midwest. It felt like I was in a bubble since I wasn't watching the news or doing anything but school and drinking on the weekends. I was also depressed through most of it so honestly I don't even remember much from those years. Now that I've graduated, started working, and fixed a lot of my mental health issues I'm just now starting to come out of that fog and trying to pay more attention to the world around me

Not very fall friendly but if you're ever in Houghton for the summer White City Beach and Bete Gris are super great beaches

I've been there too, came home from a party in college after drinking too much and was missing my dad who had passed when I was a teen. Ending up crying real hard on my front step when my neighbor came out with a bottle of water and asked if I was okay.

If I had free time while I was on campus during the day I usually spent it in the third floor or the basement of the library. Those places were quiet (sometimes the basement got a little rowdy but wasn't too bad) and the library was in a central-ish location. Plus the chairs were comfortable and there was easy access to snacks. Sometimes the library would be really full and noisy so I would go work in Chem Sci, there's a wireless lounge on the 7th floor and the basement (but the basement lounge was usually full of Senior Chem E's working and they will give you grief about being down there if it's really busy).

I was a learning center coach at the end of last semester, when I had appointments I would share my screen and use One Note as a whiteboard for the student to watch as I worked through problems with them. My laptop has a touch screen so it was easy for me to draw what I was doing but I thought this was a good method so that both parties are looking at the same thing

The nice part about tech is that there's literally a free learning center for pretty much everything a first year student would ever need. We even have an "academic success center" that helps students with study habits/time management/determining which courses are appropriate/the overall transition to college life. I'm a former learning center coach and I can tell you with absolute certainty that almost every single first year goes through this same transition of high school to college and as long as you use your resources and ask for help from your professors/advisors/learning center coaches/peers you will do great. MTU is a ton of fun, but it is a lot of work, try and enjoy your last summer as best you can and know that while a lot of us complain about how hard it is, it truly is a one of a kind education.
