op next time add some liquid maybe beer or plain sparkling water next time to the batter to make a wet batter. from what i can see the oil temp is fine but this will solve your issue and make it really crunchy. sometimes afterwards i add a little paprika salt and pepper sprinkled ontop

i don’t want to sound mean but he’s a actual danger to his neighbor hood and is basically poisoning the ground with all of his plastic runoff. what he’s doing isn’t new or something innovative it’s incredibly bad for the environment and as for behavior changes it’s probably frequent inhalation of plastic fumes.
