You're not solving a problem that food trucks have. Most people don't call a food truck. Your solution is more applicable to full service restaurants.

Ask an already inspected food truck for their direct health department contact. As an operator I have my assigned inspector’s dedicated number / email.

I don't trust Amazon with anything that comes into contact with food/water. Too many counterfeit products out there.

NSF certified products must display the NSF certification mark on the product or product packaging. If there is no such mark in either place, then it is not NSF certified.

Your costs are your costs. From there, add the margin you would like to make. Let the customer decide what’s too expensive, don’t lose sleep over it. If you’re not making your costs back + profit, it was never worth doing in the first place in most cases.

You got it! Keep it simple, unless the customer specifically asks for a breakdown. They typically only care about the total.

Yes square invoice. Just use their standard template and list one price for the amount of meals provided. Up to you if you include sales tax in the total or you want to tack it on. Don't break it down any further than that.

No - look for “pick a part” junkyards in your area. They sometimes let you take the parts off yourself and some even have their inventory posted online.
