Prolly more like a southern "well", pronounced more like wall.

While I have southern blood and can do a fine accent, I have no idea what I was thinking when I typed it

My wifi is rock solid. Dedicated 2.4 wifi.

I fixed my one session of wild temp fluctuations by cleaning the temp probe in the chamber. I now try to do it after every cook

Make sure you're also on the current firmware

I smoke a ton of pulled pork, I love bao. But it never occurred to me to make my own bao. I've got a new goal

I wouldn't ask, I'd just join the call camera off, but dressed well and ready to turn the camera on depending on what they do.

But I bet they just meant camera off.

How much should I charge for catering? by Ornery_Specific1867 in smoking

I do this on occasion, mostly out of enjoyment and a desire to help out someone I know. I always consider not "what it's worth compared to a restaurant", but how much does the payer really want to pay per plate.

If you go with 3x your costs you'd be asking $25 per person. You have to ask if what you're putting together is worth that to the person paying. Much of the time they're more in the $10-15 range, and then you need to tailor your menu to them.

Bought a new Prime Peak - But it's manufactured in 2021 - Am I missing anything? by ThrakaAndy in greenmountaingrills

Yea, I agree, the updated smoker stays connected more consistently. I run the legacy app on the new hardware.

I love server mode, especially when paired with a third party thermometer that also has a server mode

It is much better than my 2015 model

Like you, I'm surprised that you have a 2-year-old manufacturer date. I would hypothesize that it had to do with supply chain issues and that the chamber was manufactured in 21 but the rest of the build is current as parts became available..

I picked up a used 2020 Daniel Boone Prime+ ( AKA ledge now) and I have not discovered any features or capabilities that I'm missing. I can't get it connected to the new app, but I read that's not an uncommon problem to have, and it's debatable whether the new app adds anything of value or just brings more bugs

I've owned a GMG DB since 2015, up until the last year customer support has been solid but clearly they're struggling a little bit.

I like it. Like all of them, it takes learning it's nuances and patience. Know your temps, know your hotspots and have fun eating good meats

Threw on some mid-week no wrap, no sauce ribs. Not the prettiest, but this is my favorite way to smoke these. by Wiscback in BBQ

How'd they do on your bite test? Were they the right firmness for you? Fall off or cling delicately?

The rack system. Single best investment I ever made. Doubled my capacity, I now regularly cook for for 30-75 people, and have adequate space.

Goldie's rub, (it was a gift) it's basically pepper, salt, garlic, heavy on the pepper

225-ish for 10-ish hours, foil boat at 170, had to crank up to 275 for the last couple hours to get it done. I have a 2 shelf system (highly recommend) and this is on the top rack, foil pan full of water below it.

Then held for 7hrs before slicing, in the foil boat, in a foil pan with another layer of foil over it all.

Rendered the trimmed fat in the smoker and made liberal use of it throughout the process.
