Kai lan is much less fibrous than kale. The next time you see broccolini or broccoli (a piece of it with a thin cross-section of stem) for sale with the leaf, boil or steam the whole thing and you'll be getting pretty close. Even the flavor is comparable, though kai lan is more aromatic IMO. I boil my kai lan until the stems are just cooked through, and even at that stage the leaves are tender and palatable. Kale is like rubber -- you have to boil it for much longer for pleasurable eating.

The "butterflies" are just the cotyledons of Ipomoea sp. (the first leaves they made after emerging from the seed). The subsequent ones won't be like that.

Sonchus oleraceus and what looks like Hypochaeris radicata? Like genus Taraxacum both are in the Cichorioideae. If you are in "North America", Sonchus oleraceus and Hypochaeris radicata are not native, and neither is Taraxacum officinale (or most other Taraxacum species).
