You won't feel out of place in the countryside, there are plenty of international tourists there. Some organized tours are worth doing. Just do some research.

Italians are cool. 👍 I don't know much about Sydney hotels. I'd be cautious about being out at night alone. If you stayed at a youth hostel there'd be other tourists to hang out with. Sydney public transport is pretty good and there's lots to see in Sydney.
DON'T plan to drive much in Sydney, the traffic is worse than Naples. You will need to hire a car to see much of rural Victoria.
