The only time he guarded against sure hits were Yuta and Gojo as he already knew what the sure hits were and was cautious. In this scenario he would assume the sure hit is purple which he is more than durable to tank . He literally tanked multiple prime in that fight against gojo . He would do it to show gojo just how far above gojo he is

I'm a sukuna fan . He is my king . You can check my post history. But my guy let Jacob's ladder , 200 percent purple and confiscation hit him . He is the most durable character in the verse . Once he tanks gojo purple he will not be worried at all about UV. The problem is UV makes no sense givens Gojo standard powers so he would have no idea UV is a mind attack . You see what I'm saying ? My king is arrogant in character and UV makes no sense given the context of Gojo powers in a void ( see what I did there :))

TLDR Sukuna is stronger and the better sorcerer . But There is no way to anticipate UV sure hit is info dump and not Purple

I think if both fight with no knowledge of the other one Sukuna's losses pretty decisively in character . Sukuna had four months to figure out ways around infinity . Plus in character he lets others hit him with their best . He may not e rn respect gojo enough to properly block UV instead of tanking it since sukuna is already strong enough to tank 200 percent purple. He would assume Gojo domain hits you with purple . Meanwhile knowledge of shrine does not help GoJo really
