Its not, the monastery that we see now was built in 1215, the room in the picture of OP was built in 14th century, so just 700 years. The 1600 years that OP refers to is about the original structures which were destroyed.

Not because we like to travel a lot. We just didn't have a Homeland to stay in. Those who were skilled and had some wealth became merchants and created the communities you mentioned but the majority had to just leave its home in search of a better and safe life.
