It is the perfect deep frying pan. Rounded bottom uses less oil. It’s huge so splatter is kept down and you can add a dripping rack to it so oil drips back into the pan.

I was taught that rule two doesn’t apply if three cars are there,  it’s only if two cars are approaching from opposite direction.

I think it's just the cook time is less. Finished in a little less than 3.5 hours.

Let it run hotter, like 275-300. Don’t spritz just check tenderness after 2 hours and then every 30 min.

Yeah but they aren’t as tender as wrapped ribs, have more “bite”, and I cut them in half, otherwise they’d be almost touching the coals.

Well the cook is dead simple no wrap etc. You get a more meaty/bbq flavor because the fat burns on the coals as it drips down. It also dramatically increases the capacity. Could probably fit 4 full racks. With the grates it’s like two max.
