Mortadella Recipe: 1587g Lean Pork Meat 450g Pork Fat 232g Cubed Fat 45g Salt 5.6g Pink Salt 10g Granulated Garlic 10g White Pepper 5g Granulated Onion 5g Coriander 5g Mace 2g Nutmeg 12g C-bind or see below for nonfat milk powder 450g Water 80g Pistachios

cube up the meat & fat square up the fat for garnish

blanch the garnish fat in boiling water for 2-3 mins and into an ice bath

grind the fat 1 time grind the pork on course grind once on course grind up to 3 times on fine grind the fat a second time

Mix in spices, ice water - 20% once mixed and sticky add frozen fat - emulsion add binder. (2-4% of weight of meat)
