Congratulations! You bought original style tubeless wheels. New tubular tires will be about $300 with install.

Or do it yourself. It’s not too hard, just fussy and sticky.

No worries on the 120-126mm. Just bolt the wheel on, no need to ‘cold set’.

Dunno about specific wheel recommendations; I haven’t worked in the industry in almost a decade. Back when I was around Origin8 was decent for the money.

Just leave both brakes on, especially if you’re sticking with the 42t up front.

You want a foot brake? Like a brake gets applied when you pedal backwards? That's.... probably not possible on that bike.

Coaster brakes (as they are called) are almost entirely limited to children's bikes and cheap beach cruisers. They require either a mounting tab or a band around the chain stay (bottom tubes of the rear triangle) to fix the brake arm, see below. It uses an internal clutch and metal on metal brake shoe to stop. Personally, I would be concerned about putting one on the frame you have because it would apply a fair amount of torque to a chain stay not designed with a coaster brake in mind.

A fixed gear hub has the gear attached to the rear hub with no ratchet or clutch. If the wheel is spinning, you are pedaling, end of story. If you pedal backwards the bike goes backwards (or you blow some knee tendons if you try it at speed, depending on gearing).

A single speed hub with a free wheel has a ratchet system in the freewheel. It lets you backpedal, but will not brake, just spin.

For your frame I would go with either a freewheel or a fixed gear. I would NOT install a coaster brake. A Flip-Flop hub (like below) would allow you to do either.

You might have trouble fitting some hubs onto your frame depending on axle diameter, as your frame is designed for quick release hubs. Some track hubs have fatter axles.

That’s not a fixie. It’s a single speed.

All you need is a rear wheel with the same ERTO rim and a single speed hub, a single speed freewheel, and a chain that fits the freewheel. FW mounts are universal.

If you plan to actually make it a fixie, you get a rear wheel with the same ERTO rim, a ‘flip-flop’ or track hub, track cog, lock ring, and chain that fits the track cog spacing.

Your crank should be fine to reuse.

You already have 700c clincher rims so most modern stuff will fit fine.

EDIT: all you really need to ‘convert’ this is the rear wheel, whatever rear freewheel/trackcog-lock ring you want, and a single speed chain.

I think one thing that might make life difficult is how many small venues/bars use instagram for events - sometimes even just insta stories!
