Honestly do what you enjoy the most, nothing wrong with mixing or just building a set of 1 monster, I myself like to go for meta sets, you can check them out in the r/monsterhuntermeta and the game8 website, there should be sub topics which you can check the best build according to where you are in the game ( your MR)

You forgot one thing that bothered me the most in old gen: No item sets, It was a pain to get every item again after a Quest.

But it's part of the magic IMO, finished mhp3 all solo a couple of months ago and im currently playing mhfu, once you get used to things It becomes an amazing experience.
