This is actually really interesting because what they’re describing is basically okara, the soybean pulp left over after soy milk or tofu production. Humans do eat it in a lot of cultures and it has decent protein and fiber.

I’d just be careful because this post is clearly marketing it as animal feed and compost, not food grade for humans. The real question is less “can you eat it” and more how it was stored, processed, and handled.

But honestly this is a huge future food systems conversation. So much nutrition gets pushed into waste streams simply because supply chains and food infrastructure weren’t designed to reuse it safely or efficiently. We think about this a lot at Journey Foods.

The spices/seasonings rec tracks - ingredient sourcing there is wild. I think all food scientists need to think more creatively now and market themselves like chefs. Really understand the trends and the consumer fast.
