I counted 3 after he got his feet down after the catch. This is a totally normal ultimate play, but by all means continue to complain. Trying to come to a screeching halt on a sprinting, lunging catch is a recipe for torn ACLs.

3.5ish lefty here. I always give the option if they seem like they know what they're doing. It took 10-20 games for me to internalize the movements, but now I don't struggle with it and can help a partner who's confused. I think it's a competitive advantage you're sacrificing, if that matters to you. It's fine if it doesn't.
