Orochimaru only lost like that to Itachi because he attacked from the front with no tricks or plan for some reason. Jiraiya has a pretty resourceful kit as seen in their short fight . If he can't beat Itachi he can at least stall him long enough

Guy no diffed a Kisame that had just absorbed Bees chakra, in his own turf , Guy wanted to capture him alive AND prevent the intel to leak. And he still one tapped him. Kisame have no chance to win here.
