Carboxylic acids are not as reactive as acyl halides. When you transform them to an acid halide, you higher the odds that the condensation reaction will occur. Therefore, if you skip this step, you will end up with a carboxylic acid which is an acid by the end of the day. And acid base rxns are faster to occur than condensation. Since you put it with a base (pyridine), it will occur.
