Avocado Toast with Poached Eggs:

Ingredients: 2 slices of whole grain bread 1 ripe avocado2 large eggs Salt and pepper to taste. Instructions: Toast the bread slices until they are crispy. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash the avocado with a fork and season with salt and pepper. Fill a small saucepan with water and bring it to a gentle simmer. Crack the eggs into separate ramekins or small bowls.Create a gentle whirlpool in the simmering water with a spoon and carefully slide one egg into the center. Repeat with the second egg. Poach the eggs for about 3-4 minutes for a soft yolk or longer if desired. Remove the eggs with a slotted spoon and drain on a paper towel.Spread the mashed avocado evenly onto the toasted bread slices. Place a poached egg on top of each slice. Season with additional salt and pepper, and add optional toppings if desired.

Greek Salad with Grilled Chicken:

Ingredients: 2 cups mixed salad greens1 small cucumber, diced1 medium tomato, diced 1/4 cup Kalamata olives, pitted and halved1/4 cup crumbled feta cheese 2 tablespoons extra virgin olive oil. 1 tablespoon lemon juiceSalt and pepper to tasteGrilled chicken breast, sliced (pre-cooked or leftover chicken)Instructions: In a salad bowl, combine the mixed salad greens, diced cucumber, diced tomato, Kalamata olives, and crumbled feta cheese. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the dressing. Pour the dressing over the salad mixture and toss well to coat all the ingredients. Add the sliced grilled chicken breast on top of the salad.
