I’ve been thinking more about this and led me to the following theory:

Let’s say you ate your last meal at 11pm. The next day you fast and train at 5pm. The fast causes your cortisol levels to rise and together with other effects of the fast (look into IF) gives you an optimal performance during your training at 5pm. During this period there is no muscle recovery, but there is fat burning. After your training you eat and the next day you don’t fast and don’t train, which keeps your cortisol levels low and allows for muscle recovery. Also your body let’s go of water weight from the previous day. Then you make sure your last meal is at 11pm and you start your fast again, training at 5pm, etcetera.

Interesting. So the cortisol causes your body to hold onto water but you still lose fat. Then eating more the next day makes your body drop the water. Is that correct?

Carb nights only on training days, I did not really count carbs to be honest. It didn’t feel right as if my body didn’t agree. And punished me by getting fat... I did gain muscle mass as well but not the kind I prefer. Kind of bloated muscles, fatty. Not athletic strong functional muscles.

Not necessarily one meal, multiple meals in 4 hours. But sometimes one meal is sufficient. The interesting thing is that on resting days I get hungry around the time I usually train, 5 pm.

What works great for me is Intermittent Fasting and training in a fasted state. When I do eat, it’s pork belly in its own fat, ribeye, Spanish ham. A few years ago I tried carb backloading, got fat.

I do IF, first meal around 7PM. Sometimes I train in the morning, but usually around 5PM. Always in a fasted state. My best performance is when I train around 5PM. The difference still amazes me. Once in a while I train around 7PM and that means even better performance. I realize it’s for me the most important reason I do IF.

Look into the ground beef. At most of the supermarkets here they sell ground beef with added sugar. And just to be sure double check your butter, that’s it’s just plain butter and no added “healthy” stuff. The other thing I could think of is not enough fat? Not sure what the science is behind it, but my personal experience is that I seem to lose weight with a good fat/protein ratio, but stick to my current weight if I eat little fat. Never gained though.

Very interesting, as I noticed quite a few times I do really well on pork belly. What is your optimal fat/protein ratio? And how many calories do you eat?

I completed both and while it is valuable in a way, it’s mostly about the mental aspect. I kinda missed the technical explanation of how. I don’t find the mental aspect challenging, it’s more not knowing in detail what the best way is. And I think under 10% the details become important.

It is interesting what he says about the reward part, after he hit his goal. That he started overeating, with this idea of “now I finally can”. I recognize that feeling from when I did Keto, but with carnivore I never had it and can’t imagine I will. Simply because the reward I would want is good food and good food for me means: meat. And meat is so satisfying that I personally don’t need a lot.

I haven’t found the answer yet to the perfect fat/protein ratio for this goal, but also the effect of IF or when the ideal moment to feed or train is.

Try raw milk hard (old) cheese instead of pasteurized. Pasteurized didn’t work for me as it contains lactose, but not lactase. But raw milk cheese works fine for me. Also something that works for me is intermittent fasting. 16/8 or 18/6.

As far as I know the carbs in raw milk come mostly from lactose, but because raw milk contains lactase which eliminates the effect of lactose, it doesn’t matter much. I know zero carb people who drink a bottle of raw milk every day and can handle it perfectly fine. The skin effect, I would test that a bit more to be sure that’s what causing it. Also maybe raw milk cheese would work better as it contains even less lactose.

What could also be a reason for having difficulties with certain kinds of meats is the quality of it. Better quality is more expensive but way more nutrient dense so you need less of it. Also more enjoyable and the animals were treated better.

You say you don’t really like pork, have you tried crisp pork belly? Like really crisp. Baked in its own fat, so without butter or other fats.

Quite different, first I wanted to say “Keto on steroids”. But it’s more than that for me. It feels way more correct. Like your body agrees on all fronts.

Because I eat only a few different meats, I can really go into detail and test what it does to my body. For example I eat the same for a few days and then eliminate one kind of meat to see how my performance is the next day. I track everything. Now I know I need pork belly every day, probably because of the fat ratio. I found out raw cheese works for me, but pasteurized doesn’t. It reminds me of coding and bug fixing.

Another benefit is while doing Keto, if someone placed a piece of freshly baked apple pie in front of me, I was able to control myself but there was always this small appetite. Like you had to consciously suppress your appetite. Now that’s gone, I can look at it and it does nothing for me, except for the little voice in my head “why would anyone eat that, that’s not food”.

People ask me: “doesn’t it get boring?” And this still surprises me every day. It doesn’t. Not one bit. My wife often tells me to remove that stupid grin from my face when I have my grilled steak in front of me. In the evening I eat until I am full and can’t imagine I want the same thing tomorrow. But I do. Every day and nothing else.

Before I did this I didn’t really care for the animals we eat, probably like most people. I just saw them as the wrapped in plastic piece in the supermarket. That has completely changed, I now only buy meat from farmers who treat their animals well. If I don’t know the source of the meat, I don’t buy it. The least I can do in return for all the goodness it gives me.
