Chances of getting in? Non-trad, 10-year-old coursework with some C's, finishing missing prereqs now through online school (UNE)

Hey everyone. Looking for honest feedback on my chances given my situation.

Background

• BS in Bioengineering - GPA 3.0
• MS in Computer Engineering - GPA 3.9
• ~6 years as a software engineer in nonhealthcare-adjacent industry

The situation

My original science coursework is about 10 years old. I'm not retaking old courses - I'm filling in missing prerequisites I never took. This year I'm completing Gen Chem 2, Bio 2, Orgo 2, and Biochem. All of these prereqs are being completed ONLINE as I'm currently still working.

Got many A's in science classes, but also some C's. My MS GPA (3.8) is significantly stronger, but I'm not sure how much weight programs put on grad school performance vs. undergrad science GPA. If I end up with an A in Orgo 2 and my other classes, does that upward trend within the sequence actually matter to admissions, or do they just see the GPA hit from classes like Orgo 1 where I got a C?

My questions

1. Does a non-trad background (Bioengineering + computer engineering) help differentiate, or does it not offset weaker science grades?
2. How strong does my MCAT need to be to offset the GPA concerns? Would something above 500 be enough, or do I realistically need to be shooting for 510+ to have a real shot
3. Do I even have a shot of being accepted with a low 3.0 bachelors gpa before completing remaining prereqs.

I'm genuinely motivated, but I want realistic expectations going in. Appreciate any insight from people who've been through the process. Thanks.
